● 特別選用豬背脊下方的部位「豬腩骨」,也就是俗稱的「五花骨」,此部位油脂適中且分佈均勻,肉質緊實更富嚼勁。先將豬腩排放入蔬菜水中浸泡約半天,接著高溫烹炸至金黃酥脆後,加入選自南投小農有機醃漬紫蘇梅及以鎮江醋與冰糖、蜂蜜調和成的酸甜蜜汁醬,在鍋中與豬腩骨快速翻炒裹上而成。風味酸甜清爽,又伴隨隱隱焦香,不論大人小孩都愛不釋手!
